Ingredients: 6 yolks, 6 tbsp sugar, 2 tablespoons of oil, 6 tbsp matzo flour, sifted juice and zest of ½ lemon, 6 large green apples, peeled and coarsely grated, 6 egg whites beaten stiff, 100 gr of sugar to caramelize the mold
Directions: Caramelize the mold with sugar. Beat the yolks with the sugar and then add the apples, the juice and zest of the lemon, the oil and at the end the matzah meal sifted and the egg whites. Put the mixture in a mold oiled and sprinkled with sugar. Cook in a soft oven for 40 minutes.
